Chef Teresa's Kitchen: Fruit Jelly Goat Cheese

This month’s recipe is a personal favorite and even includes one of our brand of the month’s edibles if you choose to include THC in your endeavors.

Fruit Jelly Goat Cheese

What You’ll Need (Makes 20 servings):

10.5 oz Goat Cheese

1 tblsp honey

2 tblsp Chia Seeds

10 oz frozen wild blueberries, thawed

100 mg Pomegranate Fruit Jellies (Good Things Coming)

 
 

  1. Prep your Berries
    Add wild berries and honey to a skillet and cook over medium high heat for 5 minutes, until berries begin to cook down.

  2. Add Chia Seeds

    Add chia seeds and cook for another 5-10 minutes until mixture begins to thicken.

  3. Add your edibles
    Remove from heat and add Good Things Coming pomegranate fruit jellies. Using the back of a wooden spoon or spatula, smash fruit jellies into blueberry mixture to evenly combine.

  4. Cool your mixture

    Once fruit jellies are completely smashed and fully combined. Remove jelly mixture from pan and allow to cool.

  5. Top it off
    Once cool, pour jelly mixture over goat cheese log and serve with crackers, fresh fruit and nuts.
